My eldest son Joshua loves to bake. Currently his favorite is to make a batch of chocolate chip cookies.
When he first started making these now delicious cookies my hubby was scared to try them. This was because Josh didn’t want to follow the recipe. He would add what he thought made a good cookie. Eventually my hubby got him to follow the recipe and they were so-so. Now my hubby loves them. Josh makes these at least once a week.
I prefer him to make a low carb chocolate chip cookie but we haven’t been able to find one that the whole family likes and it’s hard because the texture is different when cooking with almond or coconut flour.
For now I buy him organic flour and organic sugar cane sugar. It’s the best I can do for now.
I myself do not eat them and haven’t even tried one of his yummy cookies although I’ve been tempted a few times. I usually have an Atkins bar or make a MIM or try a mock chocolate chip cookie. I’ve tried a few and although they are good I have not found one that taste exactly like the real thing.
Joshua also made Banana Bread this time too and I heard that it was pretty good as well.
Here is a picture of my ‘mock’ chocolate chip cookie.
All the chocolate chips sunk to the bottom. I’m going to try this recipe again. This time try adding a 1/4 tsp. of baking powder. It seems imitation maple syrup is what helps give the taste of a chocolate chip cookie.
