Saturday Baking

With it being Autumn and all, I decided to bake using lots of pumpkin.

I made pumpkin muffins with whole wheat flour, flax and applesauce. I replace the oil in all my muffins with Applesauce and I add some flax.

 Everyone loves Chocolate Chip cookies, so I baked some more.
 These are pumpkin cookies. These cookies had a bread-like texture. They didn't seem like cookies. Again, I used whole wheat flour and applesauce.

 These muffins were made with whole wheat flour, Vanilla yogurt, flax, pumpkin and honey. This recipe used honey instead of sugar to sweeten the muffins. The topping is made of almonds, brown sugar and oats.

I had a Pineapple Upside Down Cake on my list of goodies but I never did get around to it. I decided to make one today but Joshua wants to make and Apple Pie. Maybe I'll make the it Friday for Brent's 10th birthday.
