25 Days of Atkins

I can’t believe its been 25 days since I started my new low carb way of living. I am loving that I can lose weight (slowly) and not go hungry.
Here is a sample of my new way of eating:
Breakfast:
Atkins’ shake with a tablespoon of coconut oil and flax, a scoop of vanilla or chocolate protein or I have a mushroom, spinach omelet with either an avocado on the side or an ounce of cheddar cheese.
And coffee, with heavy cream, and sucralose liquid

Snack:
1 hard boiled egg or an avocado or a 1/2 Jicama

Lunch:
Either a chicken salad with my favorite dressing, Blue Cheese and spinach, tomato and parmesan cheese or a lettuce wrap with meat, cream cheese, tomato or avocado.

Snack:
Coffee with coconut oil, 2TBLS Heavy Cream, and liquid sucralose
5 Green Olives, or some cheese, or a veggie

Dinner:
4oz of chicken or hamburger, or any other meat, veggies,
I drink over 64oz of water a day. I add a pinch of sea salt to some of my glasses of water. I add Apple Cider Vinegar to 2 of my cups of water. I’m one of those weird people that actually likes the taste of Apple Cider Vinegar Confused smile.

I take a multi vitamin daily, Fish Oil  3*6*9 daily, Vitamin E and B12 almost daily.

The roast were served different weeks. These cuts of meat were so tender that I could eat it. Usually I have to pass because of my post oral surgery.

I was craving some pizza and found this idea online. It takes all of my 4oz of cheese for the day but is so worth it. Yummy!

Cauliflower, tuna with mayo, chopped bell peppers. Very good!

Egg and cheese omelet with avocado. The egg looks fake but it was very delicious.

Salmon patty with cheese, guacamole, and tomatoes. I also make a Feta hamburger patty too. Just add Feta cheese, salt and pepper to hamburger meat and cook.

This is a snack, other times I’ll have olives, cheddar cheese, cottage cheese, or some sort of veggie.

The whole family enjoyed this dish of cabbage with bacon. It also had salt and pepper and fresh garlic. Very tasty.

That’s my daily eats. As you can see it’s all good, God food. I haven’t had any refined foods, no hydrogenated oils or dyes and it feels great feed my body so well (and thank you to my Sweets for all his support).

I haven’t had many craving, thank the Lord. I do have about 10 boxes of Atkins’ Bars but to be honest I eat about 1 bar a week or less.

When I’m in a hurry in the morning I drink the Doctored up Atkins’ Shake. I have tried some of the Atkins’ Frozen Meals, they are in my opinion very flavorful compared to some other frozen meals I have tried.

Hope you enjoyed a peek into my Atkins Journey.

Edited to add that I’m considered a slow loser (sigh), but my main goal is to eat healthier, lower my cholesterol and feed my family better. Losing weight is great and I hope to lose some but my broader goal is to eat more God food =)

Oh, and lastly, I have been learning how to T-Tapp too. Almost daily, it’s a bit harder than I thought. I’m slowly getting those moves down.

  4. To help with your pizza craving next time, you may want to check out the recipe floating around Pinterest for a cauliflower crust to see if it fits your plan. I used it when we did GAPS and it was so yummy! Glad to have you linked up with Healthy Habits!

  5. Hi, Vicki, yes I've seen the recipe, but I've been too lazy to try it and experiment with it. I will soon though.

  6. Which pizza recipe did you use? Did you like it?

  7. All I did was melt Mozz. cheese and added the pepperoni. I now make cauliflower pizzas. If you google cauliflower pizza you'll find some good ones.

Yes, I liked it. It was very tasty and satisfied my pizza cravings.

  8. Oh and I have since realized that the delicious Atkins frozen meals have yeast extract a form of msg :( so I don't buy them as often. Just as an emergency now and then.
