Low Carb Cream Cheese Pancakes

I’m on my 38th day of living a low carb life and still love it!!! There are so many low carb recipes now. If my mother were still here on earth I know she would be cooking up a storm trying them. I miss you mom so much!!!!
Here is the latest one I have tried.

Cream Cheese Pancakes although to me it tasted more like French toast! Yum!
All you need is:
2oz cream cheese
2 eggs
1 packet stevia (I used what I had on hand which was Sucralose)
1/2 tsp. cinnamon
Put all ingredients in the blender and blend. Let sit for a few minutes to let the bubbles settle and pour 1/4 of the batter on a greased griddle or pan. 

Wait 2 minutes, flip let cook for another minute and serve.

You can add fresh berries if you like. I ate them with a non-sugar syrup. Unfortunately when I purchased my syrup I was just so excited that I found some, I didn’t check the label (which is strange because I’m an avid label checker) and it has aspartame. I’m going to finish it off anyway. Next time I’ll double check or make my own.

I almost forgot the nutrition information. 344 calories, 29g fat, 2.5g net carbs, 17g protein.

The first time I made these I used a packet of Splenda, today I used Sucralose. Both times it came out delicious. When I made them today I also added a scoop of protein powder so that upped the carbs.
These pancakes are Homeschooling6 kid approved! The children loved them and were asking for more.

I would like to report that I have lost 20 pound but I’m a slow loser. To date I have lost 10lbs. I keep teetering between 1 & 2 pounds. Up and down, up and down. It gets boring after a while but I will continue on. I can’t imagine going back to eating many of the foods I use to.

  5. Yes, now I have Stevia and they taste so good. It's a nice change from eggs, I hear ya!

  6. I am going to try these tomorrow but use liquid egg whites. They look wonderful!
