Low Carb Chicken & Spinach Parmesan

I made this the other night and really liked it. A few of my boys didn’t care for it but one is not a mayo eater and the doesn’t like cheese. Oh well, I thought it was a winner and plan to make it in the next couple of days.
Low Carb
2 cups diced cooked chicken (I forgot to prep and cook the chicken so I used raw-took forever to cook)
10 ounces frozen spinach well drained (how do you drain frozen spinach?)
1/2 cup sour cream
1/2 cup mayonnaise
1/2 tsp salt
1/2 tsp garlic powder (all I had was onion powder)
3/4 cup freshly grated Parmesan cheese
1/4 cup mozzarella cheese shredded
1. Grease an 8x8 baking dish (I drizzled Olive Oil). Use half of the frozen spinach (I used a mixture of spinach and collard greens) to layer the bottom of the dish. Arrange chicken and spread the rest of the spinach on top of the chicken.

2. Mix the remaining ingredients and spread over chicken.

3. Bake uncovered at 350* for 40 minutes or until the top is nicely browned. Don’t skimp on the baking. The topping needs to be brown for a good flavor.
I doubled the recipe to feed 8. I only had two serving left over and I ate one the next day for lunch! I don’t have a microwave so I heated it in a pan with some Olive Oil and it was very tasty.
