Low~Carb Muffin in a Mug (MIM)

If you are a regular reader of my blog you may know I’ve been eating a low~carb diet since January of this year (2013). I am on day 75.

Although I’m an Atkins mama I have enjoyed reading the book Trim Healthy Mama. Especially trying the recipes.

One of my favorites is Muffin in a Mug or what some call Muffin in a Minute. It’s about 3 net carbs depending on what kind of cocoa you use. I use Hershey’s Dark Chocolate Cocoa which has 1 net carb and the Almond Flour I rounded of to 1 net carb.

I also tweaked the recipe a bit and it came out sort of a cross between a muffin and a cake. Yum!
Muffin in a Mug
Here is the original with my *tweaking:
  1. Crack an egg in your favorite coffee mug and whisk (I use a soup mug that I purchased at Target).
  2. Add 1 1/2 Tablespoons Golden Flax Meal (*I used 2TBL).
  3. Add 1 1/2 TBL of Almond Flour.
  4. Add 1 Heaping TBL unsweetened Cocoa Powder (*I used 2 rounded TBL of of Cocoa Powder).
  5. Add 2-4 tsp. Truvia (I used 1TBL) or your favorite sweetener to taste.
  6. Add 1/2 tsp. baking powder.
  7. Add 1 flat TBL Coconut Oil. It’s okay if coconut is solid from being cold.
  8. *I also added in 1TBL of water because of the extra flax and cocoa I added.
  9. Stir or whisk until well blended.
  10. Nook for 1 minute.
  11. Turn over on a pretty plate, let cool a little, and enjoy!!!!

At the moment I don’t own a microwave so I have to run to my dad’s house or ask my SIL to nook it for one minute. I would really like a small microwave just for my MIM!!! Yeah, they are that good. Delish!!!

You can also whip up some heavy cream with a little sweetener to add on top or cut in half and add some butter. Right now I’m enjoying it as is.

If you want a lower carb muffin omit the Almond Flour and use 3TBL Flax. Although I mention 2 rounded or heaping TBL of cocoa powder in the recipe I level it because I’m counting carbs.

  2. I am trying this right now :) I ground up my flax seeds seeds and although not very sweet, it's not bad. Oh, to enjoy something that has bread texture...hehe!! (I had to use a very little amount of organic cane sugar because I don't have any other sweeteners except honey. I need to look into other sweeteners but I don't use much sugar in anything and I cannot stand artificial sweeteners like Sweet 'n Low.)

    I had a lot of carbs left to eat today, since I really wasn't hungry for tonight's pork chop.
