Half Way Through Whole30 Atkins Style

I’m half way through my Whole30 Experience. At times it’s been a challenge (like when I so wanted to use Truvia in my coffee on day 9 or close to it) but for the most part I have really enjoyed it. I have been discipline myself with food and I know I have it in me to change the way I eat.
A year ago I never ever would have believed that I’d be where I am today with eating so much better. I seriously thought it would be another 10 years to be where I’m at today.

I’m no where near being a crunchy mama. I haven’t cleared my pantry of every fake food but I can say that over 70% of what I feed my children is not processed. They still eat some pastas and rice but it’s not a daily thing.

I’m so thankful to Dr. Atkins for all his research and standing up for what he knew was right with regards to carbohydrates, fats, and protein. People didn’t believe him but he had a passion to help people especially with preventing diabetes and other diseases.
I just finished reading It Starts With Food and further educated myself about food and my body. This book is pretty amazing. In my opinion you all need to read it. It’s that good. I plan to blog about it soon.

Today my menu was:
Breakfast~2 hardboiled eggs with homemade mayo and a tomato
Lunch~2 hardboiled eggs with mayo and an avocado, chocolate, blueberry pudding. I packed this and took it with me. After church we eat out. I knew there’d be nothing that fits the Whole30 guidelines.
Dinner~a huge shrimp salad: tomato, cucumber, cilantro, onions, salt, red wine vinegar and olive oil.
Dessert~cup of coffee with homemade cashew cream.

I know it doesn’t look very appetizing but it was good. Right now I’m addicted to my boiled eggs and homemade mayo.

I plan to do the Whole30 again one of these days. Next time I’ll be more prepared. I have learned so much about food. How to prepare and make homemade things like mayo and cashew cream.

I am arming myself with some cookbooks for the next Whole30 round. Guess what? Two of my children want to go Whole30. I still need to get a few things before starting to make the experience more enjoyable for them, so it won’t be for another month.
