More Low-Carb Muffins

My kids and I have been enjoying another coconut blueberry muffin recipe. We love smothering butter on these muffins.

I got this recipe from The Coconut Ketogenic Diet book: No Sugar Blueberry Muffins. If you swap the cream for coconut milk, stevia with honey, and butter with ghee, they will be Paleo friendly.

They are Atkins, ketogenic, and Trim Healthy Mama friendly.

Look how pretty they look.

Here’s what you’ll need:
1/4 cup heavy cream or coconut milk
5 Tbls butter or ghee
1/4 tsp almond extract
1/4 tsp salt
30 drops liquid stevia
1/4 tsp aluminum free baking powder
1/3 cup fresh blueberries

Preheat oven to 400*
Blend together eggs, cream/coconut milk, butter/ghee, almond extract, salt, and stevia. In separate bowl combine coconut flour and baking powder and thoroughly mix into batter (use those muscles whisking as you add the coconut flour into the wet batter) until there are no lumps. The batter will be slightly stiff. Immediately fold in blueberries. Spoon batter into lined muffin tins. Bake for 18-20 minutes. Remove from oven and cool before eating. Store in the fridge.
Yields 6 muffins
Atkins Friendly
Each muffin contains 2.2 g. of net carbohydrates. According to the book 3 muffins provide the equivalen of 3 tablespoons of fat.
Trim Healthy Mama
Each time I’ve made these muffins the blueberries end up at the bottom. I’m not sure why but it doesn’t affect the taste. I put a tablespoon of Kerrygold butter on mine.

My children love these as well. I now double the above recipe.


  1. These look divine! Do you have a suggestion for substituting liquid stevia for something else? I don't have that on hand.

    ....making me hungry...hehe!

  2. You can try adding a few tbls of honey or any of your favorite sweeteners would word. It really depends on how sweet you want them. I'd start with a little and add more.
