Egg Fast: Buffalo Style Omelet

I love Buffalo Chicken Wings!!! Anything with buffalo sauce, well, it just makes it better.

When I found this Buffalo Omelet recipe from I Breath Hungry . . ., I was like, oh yeah! This is a pretty good size omelet too.

I tweaked it a little. Just added some mayo to it.

For the Buffalo filling you will need:
  2oz Cream Cheese
1 tablespoon mayo
1 tbsp Blue Cheese (or other soft cheese like feta )
1.5 tsp hot sauce. I use Louisiana Hot Sauce

In a small pan (or in a bowl if using the microwave) on low heat put all the ingredients in and combine and stir until smooth.
Buffalo Omelet Sauce
For the Omelet:
3 eggs
1 tbsp water
2 tbsp butter

Melt the butter in a nonstick pan. Whisk the egg and water. Pour into pan and let cook. When the egg is firm and you are able to flip it without the egg breaking flip it over and let it cook on the other side. At this time spoon the filling on one side of the egg and spread it out. Once the other side of the egg is cooked, fold the egg and serve.

Here is how I cook my omelet. I cook and flip!
Then add the filling and fold.
