Egg Fast Muffins

I’m 13 days into my Egg Fast and am really enjoying it. Who knew there were so many ways to cook up an egg. I’m not really losing anything like my Egg Fast buddies are but I’m not doing this all for weight loss though but to give myself a challenge. I like doing these health challenges. Last time it was the Whole 30.

I love that I know what I’m going to eat every day and it just makes life that much easier. On Saturdays, I eat low-carb, high fat and continue on Sunday.
One of my goodies is making the Cream Cheese Muffins. One of the talented ladies in the group posted this recipe.

They are not the prettiest muffins but they are tasty!

These are super simple, just 3 main ingredients: eggs, butter, and cream cheese and 2 more ingredients to add yumminess: Stevia or sweetener of your choice and cinnamon.

1. Melt 4oz cream cheese and 4 tablespoons of butter in a small pan and mix thoroughly. Mixing thoroughly is an important step to get a nice consistency. You can also melt in the microwave and mix.

2. Add a packet of Stevia (I used Sweet Leaf) and a tablespoon of cinnamon.
3. Add 4 eggs

5. Mix all ingredients and pour into greased muffin tins or use cupcake liners.

6. Bake for 15 minutes at 325 (they may need a little longer, mine did)

I got 6 muffins both times which = 3/4 of an egg. I plan to purchase a 6 cup jumbo muffin pan. This way I can make 4 jumbo muffins and count each muffin as 1 egg.

Calories for the whole batch is 1120 and 8 carbs.

You can enjoy these muffins with a little Thick and Sticky Maple Syrup and an Egg Fast Coffee!

Egg Fast Coffee: put 2 raw eggs in a blender or Magic Bullet, add 1 Tbsp Kerrygold butter, 1 Tbsp MCT or coconut oil, a packet of stevia and blend with coffee (I usually make a 16oz cup).

With the muffins, if you don’t have a packet of Sweet Leaf Stevia, just add your own low glycemic sweetener to taste.

The original recipe called for lots of cinnamon so I started with a tablespoon. I’ve made these a few times that way. I may add more next time. Pumpkin Spice might be a good spice to add.

My favorite way to cook up some eggs on the Egg Fast is to make some pancakes or try the Buffalo Omelet.

  3. So it's just raw eggs, no heating them or actual coffee in the coffee?

    1. Yes, I usually do the yolks only because it cools down the coffee at times. I think the heat from the coffee slightly 'cooks' them. You don't taste them at all.

  4. These are amazing. I added 2 tbsp batter to each of 12 cupcake cups and took them out about 3 minutes early. I increased cinnamon by a tsp. I used 4 tsp monkfruit powdered sweetener. Then, because my daughter is egg fasting and I am not, after they were done, I squirted a bit of sugar free whipped cream on top. AMAaaaaaaaZING. Since I made twelve, my egg fasting daughter was able to have 3 of them to represent ONE egg.
