I don’t think I’ve made Oopsie Rolls in over a year. I liked them but wasn’t that impressed enough to make them again. Big mistake!

Now that I am on the Egg Fast (Jimmy Moore called Egg Fest) diet and only consuming eggs, good fats, and cheese, I thought I’d give it another go.

After all it’s another way to eat my eggs.

Gather your ingredients:

3 eggs
3 ounces cream cheese
1/8 tsp. arrowroot or xanthan gum

Optional: spices & sweetener

So here’s what you do. Separate the eggs. Add cream cheese to the yolks and arrowroot or the xanthan gum to the whites.

Using a mixer whip the whites until soft peaks form. Once done with the whites beat the yolks and cream cheese until blended. If you are adding spices or sweeteners you’ll add them in with the yolks at this time.
Once the yolks and cream cheese (and spices if you added any) are mixed carefully fold in the egg whites.

On a cookie sheet with parchment paper (or grease pan with coconut oil) make 6 mounds with the mixture. Flatten a little if needed.
Put in a 300* oven and cook for 30 minutes. The rolls should be firm to the touch. Not soft.

Remove from oven and let cool. I stored mine between parchment paper and wrapped the bundle in it as well. Mine were gone within the day! They will keep at room temperature for a few days. They do get a little sticky, simply reheat in a toaster oven or pan.
 You can freeze these if you like.

If on the Egg Fast two rolls = 1 egg + 1oz cream cheese. You will need to add a 1 tablespoon of a fat of your choice (like mayo!).

There are only 3 eggs in this recipe so I whipped up my egg whites in a mason jar.

If you want to ‘flavor’ your Oopsie Rolls add in your extras before adding the egg whites.

Then enjoy. At the time I wrote this post I was on the Egg Fast so I made an egg and cheese sandwich with homemade mayo! Super delish!

I added a few tsp of this garlic blend to my Oopsie Rolls and it really made the rolls taste amazingly good. My Oopsie Rolls were husband approved. I served up the same sandwich, except I added some ham to his.

Turn the Oopsie Roll over and make a mini pizza, add stevia and cinnamon to make a sweet roll, the possibilities are endless with these rolls.
