Low-Carb Pancakes

These are super yummy and super easy to make. This is a spin-off from the Snicker Doodle and the Cream Cheese pancakes. As much as I love both type of pancakes I always had a hard time flipping them so I thought I'd add more cream cheese than eggs and add coconut flour.

All you need to make these yummy pancakes (that taste good without any topping but it's always fun to add fruit or Cottage Berry Whip):

  • 3 eggs
  • 4oz cream cheese
  • 1 heaping tablespoon coconut flour
  • cinnamon (although I didn't have any at the time I made these)
  • 1 Tbl. flax seed (optional, the first two times I made the pancakes I didn't add any flax)
  • Stevia to taste. I use aff Now Better Stevia and add a heaping scoop using the little spoon thingy that comes with it.
  • 1/2 tsp. vanilla
  • pinch of salt
Add all the ingredients to your Bullet or Ninja (I have the little ninja) or blender. I really like using the Bullet or Ninja because it's so easy to clean up. Blend it all up really good so you don't have any cream cheese lumps.

When making these I use a non-stick skillet. Heat some avocado oil (coconut or olive oil will work fine too). Once hot pour the batter. Don't make it a big pancake because it's too hard to flip over. I make them about 4in. which is about the size of my spatula. 
I use a metal spatula because it gets under the pancake easily and makes it nicer to flip. Plastic will work as well but they are thicker.

Once bubbly, flip the pancake and finish cooking on the other side. The pancakes will rise a bit but won't be as bread-y as pancakes made with wheat flour and such.

I add butter to mine. I love BUTTER! You can add whatever topping you like on your pancakes.
If you are careful enough you can even roll the pancakes. I put a low carb jam or just butter and eat them without fork, hehe.

      I put it in my morning cup of java, blend it up and it's a latte.
